Mississippi Pot Roast

I found this recipe on the website Spend with Pennies. I have used this recipe multiple times. It is so delicious yet so easy to make. Easy on the pocket book too!

Ingredients:   

  • 4-5 lb chuck roast
  • Salt and pepper
  • 1 T olive oil
  • 6 pepperoncini peppers, include 1/2 cup juice
  • 1 packet ranch dressing mix, 1 oz
  • 1 packet au jus gravy mix, 1 oz
  • 1/4 cup butter
  • Salt and pepper

Preparation:
Generously salt and pepper the chuck roast. In a large skillet, add one tablespoon of olive oil and heat over medium-high heat. Add the chuck roast to the pan and sear on both sides, about 5 minutes total. 

After browning the chuck roast, place into the bottom of your crockpot. Pour the pepperoncini juice over the top of the chuck roast. Sprinkle the dry ranch dressing mix and au jus gravy mix over the top. Lastly, place the pepperoncini peppers and sliced butter evenly on top of the chuck roast to give it a good balance of flavor throughout the chuck roast while it is cooking.

Cover the crockpot and cook on low for up to 8 hours depending on the size of roast you have. I recommend checking it at 7 hours to see if it is fork-tender to avoid getting overcooked.

Once it is fork-tender, remove chuck roast from the crock pot and let sit on your counter, covered with foil, for 10 minutes. Slice the meat and serve over roasted or mashed potatoes. Ladel the sauce over the top.
