Ingredients:
- 2 - 12 oz Tip of Filets
- Salt and pepper
- 1 cup packed mixed fresh cilantro and flat-leaf parsley leaves
- 1 tsp dried oregano
- 1 T chopped garlic
- 1/3 cup olive oil
- 1 T red wine vinegar
- 1 tsp fresh lime juice (1/2 lime)
- 1/2 tsp crushed red pepper flakes
Preparation:
Remove Tip of Filet out of the package and set aside to let it come to room temperature one hour before grilling.
Meanwhile, start making the chimichurri sauce. Combine the cilantro, parsley, oregano, and garlic in a food processor. Plus until finely chopped. Scrape the mixture into a bowl and stir in the olive oil, vinegar, lime juice, red pepper flakes and a pinch of salt.Â
Heat grill to medium high. Sprinkle salt and pepper on the filets. Grill the filets for 5-10 minutes per side, depending on your personal preference. Let steaks rest for 5 minutes. Cut 3/4" thick then drizzle chimichurri sauce over the top.  Serve with roasted red potatoes.
